The cheeses are of selected quality. We receive our products from small cheese dairies which still produce raw milk cheese and only deliver it to us when it is perfectly ripe. We leave the cheese in the room for at least one hour before adding it to the buffet. Only then it truly develops its perfect taste.
The Hautzinger sheep farm supplies us with cheese and milk products. A green tomato jam goes perfectly with the completely natural cheese. If it already has dried tomatoes and basil, chilli salt is enough. The taste of the smoked cheese is intensified through curing salt. Ash-coated camembert and cheese round off our offer.
